Equipment

  • 1 loaf pan 6.5 x 27.5 x 14 cm
  • 1 whisk of beaters
  • 1 Large mixing bowl

Ingredients

  • 1 1/2 cups 225g pitted dates, chopped
  • 1 1/2 cups 360ml boiling water
  • 1 1/2 tsp baking soda
  • 3/4 cup 170g unsalted butter, melted
  • 1 cup brown sugar
  • 1 1/2 large eggs 1 whole egg + 1 yolk
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cups 285g all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup 75g walnuts, chopped

Instructions

Preheat the Oven:

  • Preheat to 170°C (fan forced) and if using a tin loaf tray grease or line it.

Soak the Dates:

  • Place chopped dates in a bowl, sprinkle with baking soda, and pour boiling water over. Let sit for 15 minutes to soften.

Mix the Wet Ingredients:

  • In a large mixing bowl, combine melted butter and brown sugar until smooth. Add the eggs and vanilla extract, stirring until well mixed.

Combine Wet and Dry:

  • Gradually fold in the flour, baking powder, and salt. Then gently incorporate the soaked and drained dates and chopped walnuts.

Bake:

  • Pour the batter into your prepared pan and bake for 60 minutes, or until a toothpick inserted into the centre comes out clean.

Cool and Enjoy:

  • Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy!
