Ingredients

For the Salad:

  • 8 figs halved
  • 100 g prosciutto thinly sliced
  • 200 g fresh mozzarella torn into bite-sized pieces for a soft
  • 60 g rocket arugula
  • 2 tbsp pine nuts
  • 12 fresh basil leaves

For the Balsamic Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp aged balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • salt and freshly ground black pepper to taste

Instructions

  • Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard until emulsified. Season with salt and freshly ground black pepper to taste.
  • Assemble the Salad: Arrange the rocket on a large serving platter, distribute the figs, prosciutto, and mozzarella evenly over the rocket. Then sprinkle with toasted pine nuts and fresh basil leaves.
  • Dress and Serve: Drizzle the balsamic dressing over the salad just before serving. Toss gently to combine or serve as is for a more rustic presentation.
