Equipment

  • 1 electric mixer
  • 2 baking trays
  • 2 large mixing bowls
  • 4 small shallow bowls

Ingredients

Cookies

  • 220 grams butter (softened)
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 3 cups flour
  • 2 tsp baking powder
  • ½ tsp salt

Icing

  • 3 cups icing sugar
  • 1 tbsp glucose syrup
  • 1 egg white
  • 1 tbsp water
  • food colouring

Instructions

Cookies

  • Pre heat fan forced oven to 170°
  • Add butter and sugar to a large mixing bowl and mix with electric mixing until pale in colour (about 3 minutes).
  • Add vanilla and egg and mix again until well incorporated (1 minute).
  • Pour in flour, baking powder and salt and mix for a couple of minutes until mixture looks like bread crumbs.
  • Use your hands to form the mixture into a big ball of cookie dough.
  • Sprinkle some flour on your work surface so the dough doesn't stick, then cut dough in half so it is more manageable.
  • Use a rolling pin to roll out your dough to 1cm thickness.
  • Cut out your cookies using the cooking cutters and place on two baking trays lined with baking paper.
  • Bake for 12 minutes then remove from oven and allow cookies to cool completely on the baking trays.

Icing

  • While your cookies are cooling start on your icing.
  • Add icing sugar, glucose syrup, egg white and water to a large mixing bowl and beat with an electric mixer until well incorporated and silky smooth (about 2 minutes).
  • Divide mixture into smaller shallow bowls (we used 4 for white, black, orange and green).
  • Slowly add the food colouring a drop at a time, be careful not to add too much as this will make the mixture too runny.
  • Stir through until you have one solid colour in each shallow bowl.

Decorating

  • Dip one side of your cooking in food colouring and allow to dry, then add detail (eyes, mouths, stems) with other colours. To do this we used little paint brushes and toothpicks.
  • Leave decorated cookies to dry for a couple of hours, then store in an airtight container until you are ready to serve.
