Moules Marinières

Equipment

  • 1 heavy bottomed pot with lid

Ingredients

  • 1 kilo mussels
  • 1 tbsp olive oil
  • 1 shallot
  • 2 garlic cloves minced
  • 1 tbsp butter
  • 1 cup dry white wine
  • ½ cup cream
  • sea salt to taste
  • ¼ cup parsley finely chopped

Instructions

  • Clean and debeard the mussels.
  • In a large pot or Dutch oven add olive oil over medium heat, then add finely chopped shallot and cook for a couple of minutes then add the minced garlic, sautéing until soft and fragrant, next add the butter.
  • Pour in the white wine and cream and sprinkle with a pinch of sea salt and freshly chopped parsley.
  • Steam the mussels: Cover the pot with a lid and allow the mussels to steam for 5-7 minutes, or until they have opened up.
  • Serve and enjoy: Once the mussels have opened, remove the pot from heat and discard any mussels that have not opened. Serve the Moules Marinières hot, accompanied by crusty bread for dipping into the flavourful broth.
