Prawn Saganaki

Equipment

  • 1 oven safe heavy bottomed pan

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 400 g canned diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • ½ tsp ground cinnamon
  • ½ cup dry white wine
  • 1 tsp salt
  • 500 g raw prawns peeled and deveined
  • 100 g Greek feta crumbled
  • 2 tbsp fresh parsley chopped
  • Lemon wedges to serve

Instructions

  • Heat olive oil in a large frying pan over medium heat. Sauté onion until softened, then add garlic and cook until fragrant. Pour in the white wine to deglaze the pan, scraping up any browned bits.
  • Stir in tomato paste, canned tomatoes, oregano and cinnamon. Simmer for 15 minutes until the sauce thickens.
  • Add prawns and cook for 2-3 minutes until they start to turn pink. Sprinkle with feta and transfer the pan under a hot grill (broiler) for 10 minutes, until the feta is golden and bubbly.
  • Garnish with parsley and serve with crusty bread and lemon wedges.
