San Choy Bow Recipe: Fresh and Flavourful Turkey Lettuce Cups

Equipment

Ingredients

  • 12 baby cos leaves or iceberg lettuce leaves
  • 1 tbsp olive oil
  • 400 grams turkey breast mince
  • 1 tbsp garlic minced
  • 1 tbsp ginger minced
  • 1 cup water chestnuts diced
  • 4 button mushrooms diced
  • 1 cup bamboo shoots diced
  • 3 shallots scallions, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp corn flour
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp water
  • Optional: fried noodles crushed peanuts, fried shallots

Instructions

Prepare the Lettuce Cups:

  • Carefully peel and wash the baby cos or iceberg lettuce leaves. Set aside to dry, as they will serve as your cups for the filling.

Make the Filling:

  • Heat olive oil in a large pan over medium-high heat.
  • Add the minced garlic and ginger, stirring until fragrant, about 30 seconds.
  • Add the turkey breast mince, breaking it up with a spoon as it cooks. Stir-fry until browned and fully cooked, about 4-5 minutes.

Add Vegetables:

  • Stir in the diced water chestnuts, bamboo shoots, mushrooms and sliced shallots. Cook for another 2-3 minutes until the vegetables are heated through.

Prepare the Sauce:

  • In a small bowl, mix together soy sauce, oyster sauce, sesame oil, corn flour, and 1 tbsp of water. Stir until the corn flour is fully dissolved.

Combine & Thicken:

  • Pour the sauce mixture over the turkey and vegetable mixture. Stir well to combine.
  • Cook for another 1-2 minutes until the sauce thickens and coats the filling evenly.

Assemble:

  • Spoon the turkey mixture into the lettuce cups. Be generous but careful not to overfill them.

Garnish (Optional):

  • Sprinkle with fried noodles, crushed peanuts, fresh or fried shallots for added texture and flavour.

Serve immediately:

  • Serve San Choy Bow as a fun, interactive dish, letting everyone wrap their own lettuce cups at the table!
