Ingredients

  • 300 g sucuk sliced into rounds
  • 4 eggs
  • 150 g cheese feta or similar, cut into cubes
  • 2 ripe tomatoes cut into wedges
  • 1 large cucumber sliced
  • Freshly ground black pepper optional

Instructions

  • Place the sliced sucuk in a cold frying pan, spreading it out in a single layer.
  • Turn the heat to medium and cook the sucuk gently as the pan heats up, allowing the fat to slowly render.
  • Cook for 2–3 minutes per side until the sausage is crisp and has released its oil.
  • Push the sucuk to one side of the pan and crack in the eggs, frying them in the rendered oil to your liking.
  • Transfer everything to a serving platter or individual plates.
  • Add the cubed cheese, tomato and cucumber alongside.
  • Serve immediately, with black pepper if needed.
