BBQ Butterflied Prawns with Miso Butter

Ingredients

  • 8 large raw prawns shell-on
  • 2 tablespoons miso butter see Miso Butter recipe
  • 1 tablespoon neutral oil like grapeseed or rice bran
  • lemon wedges to serve
  • finely chopped parsley or chives

Instructions

  • Preheat BBQ to medium-high heat.
  • Butterfly the prawns as described above.
  • Drizzle or brush the flesh side with oil.
  • Place prawns flesh-side down on the BBQ for about 1 minute to get some char.
  • Flip them shell-side down and top each with a generous dollop of miso butter.
  • Close the BBQ lid (or cover loosely with foil) and cook for another 1-2 minutes, or until prawns are just opaque and the butter has melted into the flesh.
  • Serve hot with lemon wedges and a sprinkle of herbs, if using.
