Butterflying prawns is simpler than it sounds and makes them ideal for grilling. Here’s how to butterfly prawns for BBQ:
- While the prawn is still whole, with the shell and head intact, use a toothpick to gently lift and remove the intestinal tract (the dark vein) from just beneath the shell, behind the head.

- Place the prawn on its back, legs facing up.
- Use kitchen scissors to cut down the middle of the shell from the head end to the tail.
- Use a small knife to slice through the flesh along the same line, being careful not to cut all the way through.
- Gently open the prawn like a book, keeping the shell intact, legs facing up.

Equipment
- 1 BBQ/ Grill
Ingredients
- 8 large raw prawns shell-on
- 2 tablespoons miso butter see Miso Butter recipe
- 1 tablespoon neutral oil like grapeseed or rice bran
- lemon wedges to serve
- finely chopped parsley or chives
Instructions
- Preheat BBQ to medium-high heat.
- Butterfly the prawns as described above.
- Drizzle or brush the flesh side with oil.
- Place prawns flesh-side down on the BBQ for about 1 minute to get some char.
- Flip them shell-side down and top each with a generous dollop of miso butter.
- Close the BBQ lid (or cover loosely with foil) and cook for another 1-2 minutes, or until prawns are just opaque and the butter has melted into the flesh.
- Serve hot with lemon wedges and a sprinkle of herbs, if using.
