I use a 200g Scotch fillet for this recipe, but it works beautifully with sirloin or rib-eye too. The miso butter melts over the hot steak, creating a rich, savoury sauce right on the plate. Paired with a salad or some crispy potatoes, it’s a perfect midweek dinner that feels a little bit special.

Equipment
- 1 frying pan (skillet) or grill
Ingredients
- 1 x 200g Scotch fillet steak
- 1 tablespoon neutral oil like grapeseed, rice bran or light olive
- sea salt and freshly ground black pepper
- 2 tsp miso butter see Miso Butter recipe
- Optional: lemon wedge chives to serve
Instructions
- Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
- Pat the steak dry with paper towel and season generously with salt and pepper on both sides.
- Heat a heavy-based pan or BBQ grill over high heat. Add oil.
- Place the steak on the grill or pan and cook without moving it. My husband once picked up a great tip at a BBQ cooking class: when you see tiny droplets of blood begin to rise to the surface of the steak, that’s the sign it’s ready to flip.
- Flip the steak and cook for another 3–4 minutes for medium rare (or to your liking), turning only once.
- Remove from the heat and rest on a warm plate for 5 minutes.
- Top with miso butter just before serving and let it melt into the steak. After resting, slice the steak across the grain and spoon over any melted butter and juices. Add a squeeze of lemon or chopped chives if desired.
