  • 1 Large mixing bowl (for the salad)
  • 1 small bowl (for the dressing)
  • 1 serving platter

Ingredients

For the Hummus Layer

  • cups hummus store-bought or homemade using our classic hummus recipe

For the Greek Salad Topping

  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ½ cup Kalamata olives pitted and halved
  • ½ cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh mint optional

For the Dressing

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon juice
  • ½ tsp dried oregano
  • Salt and pepper to taste

Instructions

Step 1: Make the Dressing

  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.

Step 2: Prepare the Greek Salad

  • Combine diced cucumber, cherry tomatoes, red onion, olives, feta, parsley and mint in a large mixing bowl. Pour the dressing over the salad, and gently toss until everything is coated. Taste and adjust seasonings as needed.

Step 3: Assemble the Hummus Plate

  • Spread the hummus evenly across a large serving plate or shallow bowl. Spoon the Greek salad mixture over the hummus layer, leaving some of the hummus exposed around the edges for a beautiful presentation.

Step 4: Serve and Enjoy!

  • Drizzle a little extra olive oil on top, if desired. Serve the Greek Salad on Hummus with pita bread, warm flatbread, or crackers for scooping.
