Equipment

  • 1 oven tray

Ingredients

  • 4 salmon fillets about 150-180g each
  • 400 g new potatoes halved
  • 1 bunch asparagus woody ends trimmed
  • 1 lemon zested and juiced
  • 3 cloves garlic minced
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh herbs optional, such as parsley or dill

Instructions

Preheat the Oven

  • Preheat your oven to 200°C (400°F).

Roast the Potatoes

  • Toss the halved new potatoes with 1 tablespoon olive oil, salt, and pepper, then spread them on a baking tray. Roast for 10-15 minutes until slightly tender.

Prepare the Lemon Garlic Mixture

  • In a small bowl, mix together: 2 tbsp olive oil, zest of 1 lemon, juice of 1 lemon, 3 cloves garlic, minced

Add Salmon & Asparagus

  • Remove the tray from the oven.
  • Add the salmon fillets and asparagus around the potatoes.
  • Drizzle the lemon garlic mixture over everything and toss the asparagus and potatoes to coat.

Bake Until Perfectly Cooked

  • Return the tray to the oven and bake for 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve & Enjoy!

  • Garnish with fresh herbs and serve immediately with extra lemon wedges.
