Ingredients

  • 6 ripe tomatoes
  • ½ red onion
  • ½ jalapeño pepper
  • cup coriander cilantro
  • ½ tsp sugar
  • sea salt
  • pepper
  • 2 tbsp lime juice
  • 1 tbsp olive oil

Instructions

  • Start by finely dicing the tomatoes, ensuring you remove the seeds and juice to avoid excess moisture.
  • Finely chop the red onion.
  • Remove the seeds and membranes from the jalapeños for less heat and finely dice them.
  • Chop the cilantro leaves, discarding the stems.
  • Combine all the chopped ingredients in a bowl. Add freshly squeezed lime juice olive oil, sugar and a pinch of salt, pepper. Gently toss to ensure even distribution.
  • Allow the Pico de Gallo to sit for about 15-20 minutes before serving. This time allows the flavours to develop and intensify.
