  • Tomatoes: Opt for ripe, firm tomatoes (I wouldn’t recommend making Pico de Gallo when it is not tomato season).
  • Onion: Red onion is my go-to choice for its mild, slightly sweet flavour and vibrant colour. However you can use brown onions (for a punchier flavour) or even green shallots (scallions) (for an even milder flavour).
  • Coriander/ Cilantro: Fresh coriander leaves add a unique citrusy note and a burst of green colour.
  • Jalapeños or Serrano Chilli: Small and fiery these chillies bring the heat. Adjust the quantity to your preferred spice level (note in the video I have left them out because I was making a kid friendly version, however if its all adults spice it up).
  • Lime Juice: Freshly squeezed lime juice provides the necessary acidity and tanginess.
  • Salt: Enhances the flavours and helps the ingredients meld together + tomatoes and salt are best friends!
  • Sugar: Just a tiny bit to add a hint of sweetness.
  • Olive Oil: A little just to bring it all together.

  1. Serve it as a dip with corn chips, tostadas, guacamole and margaritas for the perfect Mexican inspired afternoon in the sun.

Ingredients

  • 6 ripe tomatoes
  • ½ red onion
  • ½ jalapeño pepper
  • cup coriander cilantro
  • ½ tsp sugar
  • sea salt
  • pepper
  • 2 tbsp lime juice
  • 1 tbsp olive oil

Instructions

  • Start by finely dicing the tomatoes, ensuring you remove the seeds and juice to avoid excess moisture.
  • Finely chop the red onion.
  • Remove the seeds and membranes from the jalapeños for less heat and finely dice them.
  • Chop the cilantro leaves, discarding the stems.
  • Combine all the chopped ingredients in a bowl. Add freshly squeezed lime juice olive oil, sugar and a pinch of salt, pepper. Gently toss to ensure even distribution.
  • Allow the Pico de Gallo to sit for about 15-20 minutes before serving. This time allows the flavours to develop and intensify.
