
Lately I have been binge watching a show called ‘The Bear’ and in the first season the main character Carmy Berzatto (a world renowned chef) makes what he calls “Mum’s chicken”. It looked absolutely delicious so I took note of the ingredients that he uses and did some research and it turns out that Mum’s Chicken is in fact Chicken Piccata.
Chicken Piccata is a dish that originated in Italy and has become a beloved classic in Italian-American cuisine. The term “piccata” actually refers to the method of preparing the dish, which involves thinly slicing the meat, dredging it in flour, and sautéing it in a flavourful sauce. This technique results in a tender dish that is bursting with favour.

Chicken Piccata
Ingredients
- 4 boneless skinless chicken breasts
- Salt and freshly ground black pepper
- ½ cup All-purpose flour for dredging
- 2 tbs olive oil
- 1 shallot finely chopped
- 1 garlic clove finely chopped
- ¼ cup brined capers rinsed
- ½ cup white wine
- ½ cup chicken stock
- 2 tbsp butter
- ½ tsp black pepper
- ½ tsp lemon zest
- 1/4 cup fresh lemon juice
- 1/4 cup fresh parsley chopped
Instructions
- Start by placing the chicken breasts between two sheets of baking paper and gently pound them to an even thickness.
- Dredge the chicken breasts in flour salt and pepper, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet. Cook for about 3-4 minutes on each side, until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add the shallots and cook for 2 minutes, then add the garlic and cook for an additional minute then add the capers.
- Deglaze your skillet with wine and cook until reduced by half then add the chicken stock.
- Let the sauce simmer for a few minutes until it slightly thickens. Turn the heat off then stir in the 2 tablespoons of butter to create a silky, glossy sauce.
- Add pepper, lemon zest and juice and parsley and stir through.
- Return the cooked chicken to the skillet, spooning the sauce over the top. Let it simmer for another couple of minutes to heat the chicken through.
- Serve the Chicken Piccata over mashed potatoes or cooked pasta. The choice is yours!
