The best part is they only take a couple of minutes to prepare and are really easy to make, so even a cooking novice will be able to make this super yummy, fresh oyster recipe.

Ingredients for Oysters with Lime Crème Fraiche and Salmon Roe:
- Fresh oysters (as many as desired)
- Crème fraiche
- Fresh lime zest and juice
- Salmon roe
- Chopped chives for garnish
- Crushed ice (optional)

This oyster recipe is very moreish, the oyster, with its briny essence, harmonizes beautifully with the smooth, tangy notes of lime-infused crème fraiche. The addition of salmon roe adds a delightful burst of sea essence, adding texture and a burst of salinity that perfectly complements the oyster’s natural brininess.
Types of Oysters:
You can use any type of fresh oyster you like. Personally I like my oysters smaller and usually opt for the delicious and sweet Sydney Rock Oyster although Pacific Oysters work perfectly well too.
Tip:
- Less is more! Don’t overdo the crème fraiche you only need a tiny, pea sized dollop (half a teaspoon at most) same goes for the salmon roe a few pearls is enough. Anymore of either and you overpower the oyster and this is a recipe for oysters after all.
Pairing Suggestions:
- Champagne or a crisp sparkling wine accentuates the richness of the oysters and complements the citrusy tang of the lime.
- For non-alcoholic options, a sparkling elderflower drink or a citrus-infused sparkling water can make for delightful pairings.

Oysters with Zesty Lime Crème Fraiche and Salmon Roe
Ingredients
- 12 oysters
- 2 tbsp crème Fraiche
- 1 tsp lime zest
- 1 tsp lime juice
- 1½ tbsp salmon roe
- fresh chives
- crushed ice to serve optional
Instructions
- Combine crème fraiche, lime zest and juice in a small bowl and refrigerate for 15 minutes to allow the flavours to meld together.
- Spoon a small (pea sized) dollop of the crème fraiche over each oyster, then top with about 5 pearls of salmon roe and garnish with chives.
- Serve on a platter, on top of crushed ice.
