Delicious and Nutritious Broccoli Soup: Monster Swamp Soup

When my son was little we used to call this soup Monster Swamp Soup this name would persuade him eat it without fuss. His little imagination would think about all the scary creatures that could live in this tasty green swamp, distracting him from the fact that he was actually eating a bowl full of nutritious broccoli.

Of course adults don’t need such distractions, although I must admit that in the winter months I do crave hot and filling foods. So this Broccoli Soup recipe comes in super handy because not only is it satisfying it’s actually very good for you. Coming in at just 140 calories per serve means you don’t have to feel guilty about the warm crusty bread slathered with butter you might want to serve with it 😉.

What’s more with the rising cost of living who can argue with a meal that costs $2.50 per serve?

Ingredients you need for Homemade Broccoli Soup:

There are very few ingredients required to make this delicious, hearty soup!

Ingredients

  • 1 tbsp olive oil extra virgin
  • 2 onions sliced
  • 1.2 kg broccoli approximately 4 heads
  • 4 cloves garlic crushed
  • 2 litres chicken stock salt reduced or low sodium
  • Salt and pepper to taste
  • Optional: Sour cream and chives for serving

Instructions

Prepare the Broccoli:

  • Begin by washing the broccoli thoroughly under cold water. Trim off the tough ends and separate the florets from the stems. Don’t discard the stems; peel and chop them into small pieces. The stems add an extra layer of flavour and nutrition to the soup.

Cook the Aromatics:

  • In a large pot, heat a splash of olive oil over medium heat. Add the chopped onions and broccoli stems and cook until onions become translucent, about 5 minutes. Then, add the minced garlic and sauté for another minute, until fragrant.

Add the Broccoli Florets:

  • Toss the broccoli florets into the pot with the onions and garlic. Stir to combine, allowing the broccoli to soak up the flavours of the aromatics.

Pour in the Chicken Stock:

  • Pour the chicken stock over the broccoli mixture, ensuring that all the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 15-20 minutes, or until the broccoli is tender.

Blend the Soup:

  • Once the broccoli is cooked through, remove the pot from the heat. Use an immersion blender to purée the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches. Be sure to allow the steam to escape to avoid any accidents.

  • After blending, return the soup to the pot and season with salt and pepper to taste. Give it a good stir to ensure the seasonings are evenly distributed.
