Turkish Carrot and Yogurt Dip
Equipment
- 1 box grater
- 1 roasting tray
- 1 frying pan (skillet)
- 1 Food Processor
Ingredients
- 2 tbsp pistachio nuts
- 1 tbsp sesame seeds
- 1 tbsp olive oil
- 1 garlic cloves
- 2 carrots
- 1 cup greek yogurt
- salt
- Pita bread or vegetable sticks for dipping
Instructions
Roast the Nuts and Seeds:
- Preheat a fan forced oven to 180℃
- Place pistachio and sesame seeds on a roasting tray and roast in the oven for 8 minutes.
- Remove from the oven, allow to cool to room temperature and set aside until needed.
Prepare the Carrots:
- Start by peeling and grating the carrots. You can use a box grater or a food processor with a grating attachment for this step. The finer the grate, the smoother your dip will be.
Sautee the Carrots:
- In a medium-sized frying pan (skillet), heat 1 tablespoons of extra-virgin olive oil over medium heat. Add the minced garlic and grated carrots and salt to taste. Sauté them for about 5-7 minutes or until the carrots are soft and tender. Stir occasionally to prevent burning. This step not only softens the carrots but also enhances their flavour.
- Remove carrots from heat and allow to cool.
Blend:
- In a food processor add your cooled carrots and 1 cup of greek yogurt and process until you reach your desired consistency.
Serve:
- Transfer the Turkish Carrot and Yogurt Dip to a serving dish and garnish with pistachios and sesame seeds This not only adds a burst of flavour but also a lovely crunch to the texture
