Ingredients

  • 8 new potatoes
  • 200 grams fresh green beans, trimmed
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 1 cup nicoise olives sub kalamata or black spanish olives
  • 1 baby cos lettuce
  • 300 grams high-quality tuna in olive oil, drained
  • 8 anchovies
  • For the Dressing:
  • 1/4 cup 60ml extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 garlic clove minced
  • salt and freshly ground black pepper to taste
  • 8 grissini optional

Instructions

Prepare the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper. Set aside.

Boil the potatoes:

  • Place potatoes in a saucepan of boiling salted water and boil for 10 minutes (test potato by inserting a sharp knife. It should go through easily but not be too soft.
    Drain potatoes in a colander or sieve and allow to steam dry until cool enough to handle then cut into quarters.

Boil the Eggs:

  • Place the eggs in a saucepan of boiling water and boil for 7 minutes (this will give the eggs a jam like centre).
  • Transfer the eggs to an ice bath to cool, then peel and cut them in half.

Blanch the Green Beans:

  • Bring a pot of salted water to a boil.
  • Add the green beans and cook for 2 minutes until crisp-tender.
  • Drain in a colander or sieve then refresh them with cold water to stop the cooking process. Dry them well with a tea towel.

Assemble the Salad:

  • Arrange the cos leaves on the plates.
  • Arrange the cooked green beans, cherry tomatoes, olives, potatoes, eggs, tuna, and anchovies over the greens.

Drizzle the Dressing:

  • Just before serving, drizzle the dressing over the Nicoise salad.
  • Top with a couple of grissini each if you are using them.
