Ingredients

Salad Dressing

  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 2 tbsp palm sugar finely grated
  • 1 tsp ginger finely grated
  • 1 or 2 bird eye chilli finely chopped

Prawn and Mango Salad

  • ¼ green cabbage shredded
  • 1 green mango julienned
  • ½ cup coriander leaves picked
  • ½ cup mint leaves picked
  • cup shallots (scallions) finely chopped
  • ½ avocado diced
  • 20 tiger prawns (halved lengthwise) already cooked from the fish monger
  • 1 tbsp fried shallots optional for serving

Instructions

Salad Dressing

  • Mix all salad ingredients in a small bowl and stir until well combined and palm sugar has dissolved.

Prawn and Green Mango Salad

  • Add all cabbage, green mango, coriander, mint, green shallots, avocado and prawns to a large salad bowl or serving platter and toss gently to combine.
  • Juist before you are ready to serve sprinkle over fried shallots and then the salad dressing.
