
Years ago on Valentines Day to my husband’s horror, I sent him a huge bouquet of heart shaped helium balloons to his very blokey office, just for fun (mine not his😂). Since then we have dispensed with such grandeur and expense and to his relief, this year I made him these White Chocolate and Macadamia Nut Cookies instead.
They are just the right combination of sweet, slightly salty, deliciously crumbly and devilishly moreish. I must admit that when I made them I had to eat three just to make sure they were as yum as I thought they were.
What’s more they are really easy to make and only take 20 minutes to bake. They also make great little gifts! Package them up in a cookie jar with a lovely bow and give them away to neighbours and friends for a beautiful homemade present on birthdays or at Christmas. Ingredients in White Chocolate and Macadamia Nut Cookies
There is not much that goes into these delicious little morsels all you need is:
- Butter (salted)
- Brown sugar
- Egg yolks
- Vanilla extract
- Baking powder
- Plain flour
- Macadamia nuts (salted)
- White chocolate
Note that I use salted butter and salted macadamia nuts, this is because I don’t have a massive sweet tooth and I love the hit of salt in a cookie. If you prefer your cookies on the sweeter side, I would up the sugar by a couple of tablespoons and use unsalted butter and unsalted macadamia nuts.
Method for shaping cookies
I have shaped the cookies by rolling them into balls the size of golf balls and then flattening them with the back of three fingers (see video at 1:50). This is because I prefer cookies with height rather than flat cookies. This will make about 16 cookies.
How long do White Chocolate and Macadamia Nut Cookies stay fresh for?
You can store these White Chocolate and Macadamia Nut Cookies in an air tight jar or container for two weeks easily, although I doubt they will last that long unless you have exceptional will power.

White Chocolate and Macadamia Nut Cookies
Equipment
- 1 electric beaters
- 2 oven trays
- 1 Large mixing bowl
Ingredients
- 180 grams butter (salted) at room temperature
- ⅔ cup brown sugar
- 2 tsp vanilla extract
- 2 egg yolks at room temperature
- 1 tsp baking powder
- 2 cups plain flour
- 80 grams macadamia nuts roasted and salted
- 100 grams white chocolate
Instructions
- Pre heat a fan forced oven to 170℃
- Start by chopping the macadamia nuts into quarters.
- Next chop the white chocolate into a similar size to the quartered nuts and set aside both.
- In a mixing bowl place butter and sugar and beat on high for a minute until well combined.
- Add vanilla and egg and then beat again for 30 seconds.
- Next add the baking powder and flour and beat on low speed until the flour is well incorporated.
- Add macadamia nuts and white chocolate and use a wooden spoon to mix into the dough evenly.
- Turn the dough out on a work surface and bring the dough together with your hands and shape it into a large ball. Then pop back in the mixing bowl.
- Line one or two baking trays with baking paper (depending on their size).
- Roll the dough into smaller balls (should be the size of golf balls) using your hands and then place them on the baking tray (make sure not to overcrowd the trays).
- Gently press down on each ball with the back of three fingers to flatten them slightly.
- Place trays into the oven on the middle shelves and bake for 20 minutes, rotating the tray at 10 minutes so that the cookies bake evenly.
- After 20 minutes remove from the oven and allow cookies to cool completely on the tray.
