A Twist on the Classic Tarte Tatin

Traditionally, Tarte Tatin is a French upside-down tart made with apples and caramel. But here, we’re switching things up with shallots, which become beautifully tender and sweet when roasted, and using honey to enhance their natural flavors. The addition of creamy goat cheese, fresh rocket, and crunchy walnuts elevates this dish from classic to unforgettable.

What is a Shallot Tarte Tatin?

For those unfamiliar, a Shallot Tarte Tatin is a savoury twist on the traditional apple tarte tatin. Instead of apples, we use caramelized shallots, which pair beautifully with goat cheese and walnut topping. The tart is baked with a sheet of puff pastry and inverted to showcase the shallots’ golden, sticky sweetness.

The Magic of Honey in Tarte Tatin

Can you use honey in tarte tatin? Absolutely! Honey is more than just a natural sweetener; it’s a culinary treasure with a myriad of flavours, depending on the type. For this recipe, a light, floral honey works best. It gently complements the shallots without overpowering them, adding depth and complexity to the tart. This honey shallot tarte tatin recipe showcases how honey can transform a simple dish into something elegant and gourmet.

Ingredients You Need

For the Tarte Tatin:

  • shallots, peeled and halved
  • olive oil
  • butter
  • honey
  • balsamic vinegar
  • thyme
  • 1 sheet of puff pastry, thawed

For the Topping:

  • fresh rocket (arugula)
  • goat cheese, crumbled
  • walnuts, toasted and roughly chopped

Why This Recipe Works

This recipe is a perfect balance of flavors and textures. The honey not only caramelizes the shallots to perfection but also complements the tangy goat cheese and the fresh rocket. The toasted walnuts add a satisfying crunch, making every bite a delightful experience. Plus, it’s incredibly versatile—you can easily swap out the rocket for spinach or the goat cheese for feta, depending on your preferences.

Pairing Suggestions

This savoury tarte tatin pairs beautifully with a light, crisp white wine like Sauvignon Blanc or a sparkling wine like Prosecco. The acidity and bubbles in these wines help cut through the richness of the tart, enhancing the flavours.
