Ingredients

For the Dough:

  • 3 ½ cups 525g plain flour
  • 2 ¼ tsp 7g instant dry yeast
  • ¼ cup 55g caster sugar
  • ½ tsp salt
  • 1 cup 250ml warm milk (around 37°C)
  • 1 large egg
  • 75 g unsalted butter melted

For the Filling:

  • 75 g unsalted butter softened
  • cup 150g brown sugar
  • 2 tbsp ground cinnamon

For the Glaze:

  • 1 cup 125g icing sugar
  • 3 tbs milk
  • ½ tsp vanilla extract

Instructions

Make the Dough

  • In a large mixing bowl, combine the flour, yeast, sugar, and salt.
  • Add warm milk, egg, and melted butter. Mix until a sticky dough forms.
  • Knead on a lightly floured surface for 8–10 minutes until the dough is smooth and elastic.

Let It Rise

  • Place the dough in a lightly oiled bowl, cover with a damp tea towel, and let it rise in a warm spot for about 1 hour, or until doubled in size.

Prepare the Filling

  • In a small bowl, mix softened butter, brown sugar, and cinnamon into a smooth paste.

Assemble the Scrolls

  • Roll out the dough on a floured surface into a rectangle (40 x 30 cm).
