This is one of those dinners I come back to again and again when time is short but I still want something fresh and satisfying. The chicken is quickly marinated with spices and lime, finished with tomato paste for a little saucy kick, and served in a bowl with colourful toppings and crisp baked tortilla chips.
It looks impressive when you plate it up — chicken in the centre, everything else fanned neatly around — but it couldn’t be easier to pull together. The best part is how flexible it is: swap out toppings, use whatever cheese you’ve got, or even change the protein.

Why You’ll Love This Recipe
- On the table in about 30 minutes.
- Fresh and colourful, but still filling.
- Flexible — change the toppings or protein to suit what you have.
- The baked tortilla chips make it lighter than a rice bowl but still crunchy and satisfying.
- Easy to dress up: a dollop of sour cream, a drizzle of chilli sauce, maybe even a margarita on the side.

Ingredients Explained
- Chicken thighs – I like thighs for their flavour and tenderness, but chicken breast works too if that’s what you have.
- Spices (smoked paprika, cumin, chilli powder) – these give the chicken a smoky, lightly spiced flavour. Adjust the chilli to suit your heat tolerance.
- Garlic & lime – the backbone of the marinade. Lime keeps the chicken bright and juicy, garlic adds savoury punch.
- Tomato paste – stirred in at the end, it creates a light, saucy coating that ties everything together.
- Tortillas – baked into crunchy chips, they replace the rice and keep this bowl feeling fresh. Corn or flour tortillas both work.
- Cherry tomatoes – halved and sprinkled with sea salt to bring out their sweetness. Swap with Pico de Gallo if you have more time and want a more authentic flavour.
- Avocado – diced and tossed with lime juice so it stays fresh and vibrant. Swap for guacamole if you prefer.
- Corn – charred for smoky flavour and colour. If you’re short on time, canned corn works fine.
- Black beans – add protein and heartiness. Canned beans are perfect here — just rinse and drain.
- Red onion – sliced thin for crunch and sharpness.
- Cheese – I usually go with cheddar, but you could do a crumbling of feta too.
- Coriander – fresh and aromatic, it lifts the whole bowl.
- Sour cream – balances the spice and brings everything together.

Protein Swap Ideas
Chicken is the base here, but this recipe works beautifully with other proteins too:
- Prawns – pan-fry with the same marinade for a light and summery version.
- Beef – thinly sliced steak cooks in just minutes and gives a hearty twist.
- Pork – strips of pork shoulder or tenderloin work with the same spice mix.
- Vegetarian – roasted sweet potato, crispy tofu, or grilled halloumi make great meat-free options.

Topping Upgrades
This recipe is all about flexibility. I usually keep things simple with tomatoes, avocado, beans, cheese, and onion — but you can easily switch things up:
- Replace the tomatoes with my Pico de Gallo for a zesty punch.
- Swap the avocado for my Guacamole for a creamier, more authentic topping.
- Scatter over pickled jalapeños if you like extra tang.
- Add your favourite chilli sauce — mine is El Yucateco Salsa Picante de Chile Habanero, which brings just the right amount of fire.
Drinks to Match
This bowl is fresh and vibrant, so it pairs well with something equally refreshing. Try a Chelada if you’re keeping it casual, or a Classic Margarita if you feel like treating yourself.

Storage
- Chicken & toppings – store in airtight containers in the fridge for up to 3 days.
- Tortilla chips – keep in an airtight container at room temperature for 2–3 days; reheat in the oven to crisp back up.
- Avocado – best added fresh at serving time.

Final Thoughts
This Chicken Burrito Bowl is one of those dishes that proves quick dinners don’t have to be boring. It’s fresh, flexible, and fun to serve — whether you’re cooking for the family or pulling something together for friends. Keep the base recipe on hand, then play with toppings and proteins to make it your own.

Chicken Burrito Bowl with Baked Tortilla Chips
Equipment
- 1 Baking tray
- 1 Frying Pan
Ingredients
For the chicken:
- 500 g chicken thigh fillets
- 2 cloves garlic
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp chilli powder optional, for heat
- 1 tbsp olive oil
- Juice of 1 lime
- Salt and pepper to taste
- 1 tbsp tomato paste
- Splash of water
For the baked tortilla chips:
- 6 small tortillas corn or flour
- 2 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp sea salt
Toppings
- 1 cup cherry tomatoes
- 1 cup corn kernels
- 1 cup black beans canned, rinsed and drained
- 1 avocado
- ½ red onion
- ½ cup grated cheese
- Fresh coriander cilantro
- Jalapeños optional
- Lime wedges to serve
- Sour cream or Greek yoghurt
Instructions
Marinate the chicken
- Cut chicken thighs into strips. Mince the garlic. In a bowl, add olive oil first, then stir in garlic, paprika, cumin, chilli powder (if using), lime juice, salt, and pepper to make a paste. Add the chicken last and toss until evenly coated. Set aside to marinate while you prepare the tortilla chips and toppings (15–20 minutes is enough).
Bake the tortilla chips
- Preheat oven to 180°C (fan-forced). Cut tortillas into wedges, brush with olive oil, sprinkle with paprika and salt, then spread in a single layer on a baking tray. Bake for 12 minutes, until golden. Remove from the oven and let them cool on the tray — they will crisp up further as they cool.
Prepare toppings
- Char the corn in a hot pan or on the BBQ until lightly golden. (If your corn is already cooked or charred, you can skip this step.)
- Halve the cherry tomatoes and sprinkle lightly with sea salt to bring out their flavour.
- Dice the avocado and drizzle with a little lime juice to keep it fresh and vibrant.
- Slice the red onion thinly. Roughly chop the coriander.
Cook the chicken
- Heat a large pan over medium-high heat. Add the marinated chicken and cook for 6–8 minutes, until golden and cooked through. Stir in the tomato paste with a splash of water during the last 2 minutes of cooking, creating a light, saucy coating.
Assemble bowls
- Use flat-bottomed bowls for plating. Place the chicken in the centre, then arrange the toppings evenly around it — grated cheese, black beans, tomatoes, avocado, red onion, and tortilla chips. Finish with a dollop of sour cream, a scattering of coriander, and lime wedges on the side.
