Equipment

  • 2-3 flat baking trays
  • 1 Large mixing bowl

Ingredients

  • 400 grams lamb mince
  • 400 grams beef mince
  • 150 grams finely diced bacon
  • 1 small onion finely diced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian herb mix
  • 2 eggs one for the mince mixture, one for egg wash
  • 4 puff pastry sheets

Instructions

Prepare the filling:

  • In a large mixing bowl, combine the lamb mince, beef mince, diced bacon, and finely diced onion.
  • Add the salt, pepper, and Italian herb mix.
  • Crack one egg into the mixture and mix thoroughly until well combined. You can use your hands to ensure an even distribution of ingredients.

Prepare the pastry:

  • Lay out the puff pastry sheets on a lightly floured, clean, flat surface. If they’re frozen, let them thaw slightly to make them easier to work with.

Assemble the sausage rolls:

  • Divide the mince mixture into 8 equal portions.
  • Shape each portion into a long log, about the same length as the pastry strips.
  • Place 2 mince logs per pastry sheet about 2cm from each edge of the sheet. Then cut down the middle (see video below).
  • Roll the pastry over the mince to encase it, sealing the edges by pressing them together. You can use a fork to crimp the edges for a decorative look.

Cut the Sausage Rolls:

  • Use a sharp knife to cut the sausage rolls into thirds (for a generous size) or quarters (for a smaller option).

Egg wash:

  • Beat the remaining egg in a small bowl.
  • Brush the top of each sausage roll with the beaten egg to give them a golden, shiny finish when baked.

Optional garnish:

  • Sprinkle over sesame seeds or poppy seeds or a mixture of both.

Bake:

  • Preheat your oven to 220°C
  • Line a baking tray with parchment paper and place the sausage rolls on it.
  • Use a sharp knife to score a couple of slits on the top of each roll, allowing steam to escape during baking.
  • Bake for 20-25 minutes, or until the pastry is golden brown and crisp, and the filling is cooked through.

Serve:

  • Allow the sausage rolls to cool slightly before serving. They can be enjoyed warm or at room temperature, perfect for a snack or as a party appetizer!
