Why Duck and Orange Are a Perfect Pair

Duck and orange are a match made in culinary heaven, famously showcased in the French classic Duck à l’Orange. The natural fattiness of duck benefits from the acidity and sweetness of citrus, creating a balanced dish with layers of flavour.

This recipe highlights that harmony with crispy-skinned roasted duck alongside a zesty orange salad for a vibrant, well-rounded meal.

How to Achieve Perfectly Crispy Duck Skin

The key to a great roast duck is getting the skin irresistibly crispy while keeping the meat tender and juicy. Follow these steps for success:

✔️ Prick the Skin – Use a pin or skewer to poke small holes all over the skin. This helps the fat render out during cooking.

✔️ Season Generously – Salt helps draw out moisture and enhances the flavor of the duck.

✔️ Air-Dry the Duck – Leaving the duck uncovered in the fridge for a few hours (or overnight) dries out the skin, leading to better crisping.

✔️ Slow Roast First – Cooking at a lower temperature allows the fat to render slowly without drying out the meat.

✔️ Blast with High Heat – Finishing at a high temperature crisps up the skin for that signature crunch.

Serving Suggestions & Wine Pairing

🍽 Side Dish Ideas: This dish pairs beautifully with Creamy Cauliflower Purée for a luxurious, velvety complement to the crispy duck. You can also serve it with roasted root vegetables or a warm grain salad.

🍷 Wine Pairing: A Pinot Noir or a medium-bodied Grenache works beautifully with the richness of duck and the citrusy brightness of the salad.

Final Tips for the Best Roast Duck

✔️ Choose Good Quality Duck – Fresh, free-range duck will give you the best flavor and texture.
✔️ Don’t Skip the Drying Step – Air-drying in the fridge is essential for achieving crispy skin.
✔️ Save the Rendered Duck Fat! – It’s perfect for roasting potatoes or adding depth to other dishes.
